what do you do if you've set the sitemap to 6 but you're only seeing sub-categories one level down...? I was expecting to see 5 sub-sub-categories under my sub-category but it only shows 1. This is on displaylinks.tpl
Go to sitemap.php and you see the six levels. Likewise it affects the 'add link' page selector. In theory you can use {CATSUBCATS} to show sub-sub categories on the main page, but I believe this will slow things down noticably.
