If you want to show all of them and thus have no need for "more..." go to Admin -> Settings -> Categories -> "Max subcategories to show on main page" and set that to a large number, say 100.

The "more..." was showing when there were no subcategories? That's odd, it doesn't for me. Or did you have subcategories but set to show 0 of them?

Still need to remove the more from the subcats menu.
