The guest defaults for style, template and language are all set on your admin panel -> settings -> general page.
3.3.5 added these options to the registration defaults page to make the member defaults obey those settings -- because, frankly, it was very confusing when people would change their default template set and then wonder why all new members were still seeing the old template set. Best to have the registrations defaults include an option to not impose anything.
As for the "2 options" you note, "default" is simply the name of your template set and language.
So apparently what makes things much less confusing to me just adds more confusion. Oh well.

In the settings->registration defaults section of the admin CP, if I look at the options for:
Style:
Template Set:
Language:
..I have:
Style: [use the guest default] (only 1 option)
Template Set: [use the guest default|default] (2 options)
Language: [use the guest default|default] (2 options)
So I look in settings->manage usergroups and select guest. I don't recognize anything that would be the 'use the guest default' for the above.
Is my DB got a problem or is this some sort of bug?
