I believe you exceeded the allowed mysql field size for a post, so needless to say something is causing an insane amount of processing. It appears to be updating your totals at first, but then for reasons I can't even begin to guess at it starts marking various items as validated or deleted, regenerating category totals, and everything else under the sun. Blank id values are coming in somewhere under the sun.
This should be more possible to make something of once crons are added, though none of the timed actions are supposed to regenerate everything and I've never seen them do so before.

That would explain why my cat totals change on a daily basis without me doing anything... what do you suggest that I do for now, if anything...

I have not changed any php code.. from what you have seen, could this be a problem with the links or cats tables in the database?
