The difference right now is basically that the current series gets a lot more frequent releases than the stable series. The current series gets new features, the stable series doesn't. The stable series gets as few changes as possible.
Use the current series for new sites, at least if the autoupgrade works on your server, unless you're extremely conservative.
Use the stable series for any old site that's already using it that you don't want to spend time upgrading to the new series, or perhaps for a site that you just want to leave alone and not upgrade for six months.
Also, customers from years back may need to pay for the current series.
The plan right now is to support the 5.0 series with important fixes to the end of this year. No ETA yet for how long 5.1 will be supported, depends on when 6.0 comes out.

Searched for but could not find the difference ? - Could you explain more ?
Assuming on this end that the current series has all the latest features ..
Stable - is a word that invokes fear ? - for a non-stable series ?
