Just a guess, but what if you changed the star colors in ajaxstar.gif in the images_default dir?

Yes, that's the image it uses. Note that changing the size of the image could break things -- the little ajax star rater script I found and plugged in for that indicated that it didn't support changing the size. Color-changing should be fine though.
