I have a link alias to a category but now wish it not to be. My template is set for SWITCH_CATSELECTOR but with that you do not seem to be able to remove an alias. Once you have clicked on a category within the catselector you can only click on another category.

I'm not able to find any trouble. I select to alias a link to two categories, then I go back and unselect one of them, and it's no longer aliased to the one unselected.

Sorry - the condition IF {SWITCH_CATSELECTOR} I have switch to yes so it shows the selector, not just the field to input cat ids.
On my site it does not deselect - which I presume you mean the usual way by clicking on it again.

This link is aliased to - cardigan welsh corgi. You cannot deselect it
