I posted the message below in the 'Hacks and Templates' sub-forum some time back but did not get any replies.
Hopefully it will not be considered bad practice if I re-post the query here:
"In system configuration, there is a facility to send administrator emails from a specific address.
"Administrator e-mail: E-mail notifications to users (and any other sort of outgoing mail) will be sent from this address."
However, I was looking for something that would allow incoming messages from the contact form to be sent to a specific address. It appears that they can only be sent to the default administrator address. Is there any way of directing them to a different email address?" (e.g. Contact@website.com)

Select in settigns->general to send to the admin with lowest id and then edit your profile.
